2005 Pinot Noir (05008)(CLUB MEMBERS ONLY)
This Pinot Noir is a blend of three Dijon clones namely 667, 777 and 115. The grapes were hand picked in 15 kg crate at the beginning of October 2005 at 20 to 23 Brix. Hand-picking occurred to ensure that clusters arrive un-harmed to the cellar where they were hand sorted on a vibrating sorting table. The sorted grapes were then transported (using a conveyor belt) to the crusher and de-stemmer while 20% of the fruit was left as whole berries.
Using gravity, the fruit was crushed into open top 4-tonne fermenters where cold soaking took place from 4 to 8 days. Following this process, the tanks were warmed up and inoculated with a yeast strain. Some of the batches were left un-inoculated for spontaneous fermentation to take place.
Following fermentation, the wine was run by gravity to 38% new barrels, 34.5% second fill and 27.5% older barrels of which 80% were French and 20% American Oak. Aging took place from October 2005 to July 2006 during which time malolactic fermentation took place in barrel. All the clones were vinified and aged separately after which we selected the most fruit driven barrels for our 2005 Pinot Noir blend.
Medium dark, brick red Pinot Noir with sweet ripe red fruit (strawberries and rhubarb) on the nose. The palate shows an earthy minerality with the same underlying red fruit and well structured tannins.
