2007 Twisted (07003)
The grapes were hand picked during September and October and hand sorted on a shaking table. The different components were then either de-stemmed, crushed, cold soaked and pressed or whole cluster pressed, depending on the batch.
The juice of the individual components was cold-settled separately, racked clean and individually inoculated with a variety of yeast strains. Cool fermentation at 10-12 degrees C took 6-8 weeks. After the completion of fermentation, the lees of the individual tanks were gently stirred up weekly for four weeks and then left to settle. The wines were blended (after numerous blending trials to find the desired balance, structure and fruitfulness), stabilized, racked and filtered before bottling in April 2008.
The blend consists of the following components:

- Chardonnay (20%)
- Gewurztraminer (20%)
