2006 Sweet Revenge Vidal Icewine (06006)
Grapes were picked in the bitterly cold end of January 2007 when the temperature dropped to below -10°C. The frozen Vidal grapes were pressed whole bunch with a wooden basket press and the precious syrupy juice was collected at 40.9 Brix.
The juice arrived at the cellar on a biting cold day in February and gravity fed into a stainless steel tank where it was cold settled for one month, racked, the clean juice warmed and inoculated with the yeast strain DV10.
A cool fermentation at 14°C followed. After the completion of fermentation, the wine was stabilized, racked and filtered before bottling in May 2007.
Pale gold colour. Very fruity with notes of fresh apricots, rich honey and hints of tangerine. Intense fruit and sweetness with a refreshing acidity.
